Potato and egg scramble

2 Diced Medium Potatoes
8 Eggs, stirred
1 Chopped Onion
2 Chopped Peppers (your choice)
2 Tablespoons Butter

This filling breakfast is a great way to start the day while camping. It cooks in one pan and serves four people.

Bannock bread

3 Cups Flour
2 Tablespoons Baking Powder
Dash of salt
3 Tablespoons Fat, either oil, lard, or butter
1 Cup Warm Water (depends)

Bannock Bread is one of the world's most well-known and simple camping recipes. Some people eat it for dessert, others for breakfast, and still others share it as a snack. In any case, it's an ideal microcosm for simple campfire cooking.

Corn and corn fritters

2 Cups Corn Bread Mix
½ Cup Water
½ Cup Canned Corn, Rinsed and Drained
2 Tablespoons Sugar
¼ Cup Cooking Oil

These delectable treats are suitable for breakfast, lunch, dinner, or simply as a snack. In a mixing bowl, combine the Corn Bread Mix and the Sugar. Then slowly pour in the water and continue to mix. While constant mixing is desirable, over-mixing is not. After that, add the drained Canned Corn and mix well.

Chicken Tzatziki Skewers

These Greek-inspired grilled chicken skewers with tzatziki sauce can be served as an appetizer or as the centerpiece of a full dinner spread. Make (or buy) the tzatziki sauce and chop the vegetables and chicken ahead of time so all you have to do at the campsite is assemble and grill the skewers.

Shrimp Boil Foil Packets

This Shrimp Boil Foil Packet is one of our all-time summertime favorites, with shrimp, smoky sausage, buttery corn, and zesty lemon. And, because the entire meal is cooked in foil, there are NO DISHES to wash at the end of the night!
